Easy DIY Walnut Milk Recipe by Roberta Walker

Walnut Milk
Makes 4 cups

Ingredients

1 C whole, raw walnuts, soaked 8-10 hours, drained and rinsed

Pinch of salt

2 tsp vanilla bean powder

4 C of water

Cooking Instructions

  1. Place ingredients into the carafe of the Vita-Mix (or other high-speed blender). Add water and salt. Secure lid and select Variable 1. Turn machine on and quickly increase speed to variable 10. Blend until nuts are completely broken down. Be careful not to blend too long, as the friction from the blender will create heat.
  2. Place you E3Live nut milk bag into a large deep bowl. Pour your milk through the nut milk bag and squeeze as much of the  moisture out as possible. Drink your yummy, smooth fresh walnut milk on it’s own, with Roberta’s Raw Mulberry Granola, or in a smoothie!
  3. I think it’s sweet on it’s own but if you like a sweeter milk you can add a little coconut nectar, a few dates, or lucuma powder.

Note: Reserve your pulp to use in a cake, crouton, or bread recipe. It will freeze well until you have enough saved to use.

Pumpkin Fun & a Yummy Pumpkin Smoothie Recipe!

As Halloween is fast approaching, we wanted to share some fun pumpkin photos with you and a delicious creamy dreamy Pumpkin Smoothie recipe too!

E3Live Pumpkin Smoothie!

This thick and creamy pumpkin smoothie is like chilled pumpkin pie in a glass, so yummy!  Great as a breakfast drink, snack, or even a fun Fall dessert!

Ingredients:

  • 1/2 cup pumpkin puree
  • 1/2 very ripe medium-sized banana
  • 3/4 cup almond milk (or other nut milk of your choice)
  • 2-3 pitted dates (or other sweetener of your choice)
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • 1 cup crushed ice
  • For a nutritional boost, add 1 tsp of E3Live or E3AFA
Place all ingredients in a blender and puree until smooth, making sure the ice is completely crushed.   Enjoy!

Enjoying Fall and a Delicious Raw Pumpkin Soup Recipe!

We hope you are enjoying all the delights of the Fall season!  In many parts of the U.S., the changing colors of the tree leaves are beyond beautiful this year – many reds, oranges and golds that depending on the weather each year do not always have time to show.  We hope you are able to see some of this beauty before the winter weather comes calling!  We also wanted to share a delicious recipe with you – one that can be for pumpkin or squash.  It would be a delicious addition to any Thanksgiving table!

Raw Pumpkin Harvest Soup

Ingredients:

3 cups raw pumpkin OR butternut squash (peeled and diced)
2 ½ cups distilled water
1 orange (peeled, quartered, and seeded)
1 red bell pepper (quartered and seeded)
1 cup frozen corn kernels (thawed)
1 tsp raw unfiltered honey
½ avocado (pitted)
½ tsp Celtic or Himalayan salt (or to taste)
¼-inch piece of ginger (peeled)
1 garlic clove (optional)
Pinch of cinnamon
¼ cup raw pumpkin seeds

 

Directions:
Place all ingredients in a Vita-Mix or other powerful blender and process until creamy.
Divide into 4 soup bowls and garnish with raw pumpkin seeds and fresh thyme.  For an added nutritional boost, sprinkle some E3AFA on top!

We get many clients asking about recipes for E3Live – especially for E3Live juices and smoothies – and we are happy to give you three of our favorites today!
