Enjoying Fall and a Delicious Raw Pumpkin Soup Recipe!

We hope you are enjoying all the delights of the Fall season!  In many parts of the U.S., the changing colors of the tree leaves are beyond beautiful this year – many reds, oranges and golds that depending on the weather each year do not always have time to show.  We hope you are able to see some of this beauty before the winter weather comes calling!  We also wanted to share a delicious recipe with you – one that can be for pumpkin or squash.  It would be a delicious addition to any Thanksgiving table!

Raw Pumpkin Harvest Soup

Ingredients:

3 cups raw pumpkin OR butternut squash (peeled and diced)
2 ½ cups distilled water
1 orange (peeled, quartered, and seeded)
1 red bell pepper (quartered and seeded)
1 cup frozen corn kernels (thawed)
1 tsp raw unfiltered honey
½ avocado (pitted)
½ tsp Celtic or Himalayan salt (or to taste)
¼-inch piece of ginger (peeled)
1 garlic clove (optional)
Pinch of cinnamon
¼ cup raw pumpkin seeds

 

Directions:
Place all ingredients in a Vita-Mix or other powerful blender and process until creamy.
Divide into 4 soup bowls and garnish with raw pumpkin seeds and fresh thyme.  For an added nutritional boost, sprinkle some E3AFA on top!
